Chicago's First Fried Chicken Food Truck
Roost Chicken & Biscuits began its journey in 2012 as Chicago’s very first fried chicken food truck. It all started with a simple idea: introduce Chicagoans to the simple beauty of the Chicken Biscuit Sandwich. After years of serving customers from the truck, we knew it was time to grow. In 2014, we opened our first brick-and-mortar store and haven’t looked back since.
What makes our Chicken & Biscuits special?
Our buttermilk biscuits are made from scratch, by hand, in small batches using the same recipe passed down to our founder, Joe Scroggs, from his Grandmother. Soft and fluffy on the inside with a buttery crunch on the outside.
Our chicken soaks in a rich buttermilk brine for 24 hours before being hand breaded and deep fried to golden perfection. Crispy on the outside, juicy on the inide.
Put these two together, and you have the perfect fried chicken sandwich!
What makes our Wings special?
Our wings go through a two step brining process. First, they are soaked in a Wet Brine to ensure the meat is juicy and flavorful. Once they are drained and dried, they go through a second, Dry Brine. This is to ensure the skin is flavorful and extra crispy.
Then our wings are twice fried to make sure they get to your plate with a level of crispiness and flavorocity not before seen in the world of wings.
